Rinderrouladen mit Pilzfüllung

1 Zwiebel
4 Rinderrouladen
6-7 Pilze
1/2 EL Mehl
Salz und Pfeffer
5 EL Senf

Die Zwiebel schälen und hacken.Die Pilze putzen, waschen und klein schneiden.Die Zwiebel in heißem Öl anrösten.
Die Pilze dazugeben, kurz dünsten und die Zwiebel-Pilz-Mischung abkühlen lassen. Die Rouladen, salzen, pfeffern und dünn mit Senf bestreichen.Die Pilz-Zwiebel-Masse darauf verteilen, die Fleischscheiben aufrollen und mit einem Zahnstocher verschließen.Die Rouladen in heißem öl rundum braun anbraten und etwas Wasser angießen. Restliche Pilzmischung hinzugeben und die Rouladen etwa 20 Minuten schmoren lassen.
Die Rouladen vom Topf rausnehmen. Mehl in etwas Öl anschwitzen und mit der Sauce anrühren und über die Rouladen geben.
